Have you ever seen that meme on social media?… “If someone tells you that you’re putting too much peanut butter (“PB”) on your bread, stop talking to them. You don’t need that kind of negativity in your life.” Perhaps, I should stop talking to myself then?… Since I realized my PB habit is out of control.
My issue, and many of my clients’, is that I overdo it with the spread. Seriously, I can fit a ½ cup of PB on my morning toast- not exactly the recommended 2 tablespoons. This is why I decided it was time for peanut butter rehab. The intervention: staying away from spreading (and pouring) and instead, drizzling the good stuff over a Greek yogurt base…
The drizzle is achieved by using an “all-natural peanut butter”. This is NOT your standard lunch-room peanut butter laden with hydrogenated oils. While these oils makes for a smooth, velvety and emulsified product (AKA, no oil separation at the top), they are not particularly heart healthy. Ever notice how you can turn a jar of Skippy PB upside down and it stays in the jar? That’s because of the stabilizing effect of the hydrogenated oils. Since an all-natural peanut butter does not bear these emulsifying fats, you do the emulsifying yourself– by vigorously mix the top layer of oil back into the peanut spread. This “natural peanut butter” is not only healthier, but its thinner consistency can do something the OG Skippy can never do… The Drizzle…
The Greek Yogurt PB Drizzy Toast
Total Time: 5-7 minutes
Yield: 1 serving
Ingredients:
- 1 slice Landsberg Sunflower Seed Bread
- ¼ cup 0% Fage Greek Yogurt
- 1 tablespoon (fine.. MAXIMUM 2) all-natural peanut butter
- Look for ingredients: “peanuts and 1% or less of salt”, ie: Trader Joe’s Brand or Whole foods 365 Brand, Smucker’s Natural (these are ideal for drizzling, especially top of the jar where there is naturally more oil!)
- ½ banana, sliced
- 3 strawberries, sliced
Directions:
- Toast the Sunflower Seed Bread
- Spread the Greek yogurt on the bread; top with strawberry and banana slices
- Drizzle on the peanut butter and enjoy
